Grilled Peach and Halloumi Salad

This recipe is super simple and delicious. Takes about 20-30 minutes to make and tastes like summer!


Grocery list

Arugula

Basil

Snap peas

Block of halloumi

3 ripe peaches

1 large lemon

Dijon mustard

Monk fruit sugar (or whatever sugar you have)

Olive oil

White wine vinegar

1 French baguette



Step 1 :

Brush the peaches with olive oil and sprinkle with a pinch of salt. Grill on medium - high for 15 minutes on each side.



Step 2:

Make the dressing while the peaches are grilling.

Combine:

1/4 cup fresh squeezed lemon juice

1/4 cup dijon mustard

1 tsp monk fruit sugar

2 tbsp olive oil

1 tsp white wine vinegar

pinch of sea salt


I usually put al the ingredients in a mason jar and shake it up.


Step 3:

Combine arugula, snap peas, spinach, and basil in a bowl and top with the dijon dressing.


Step 4:

Slice the block of halloumi into 1/4 inch thick pieces. Place in a pan with a bit of olive oil and grill until golden brown on both sides (approx. 10 mins on medium on each side). Squeeze lemon juice on top and place a lid on the pan and take off heat.




Step 5:

I added a few slices of French bread to the grill with the peaches and let them grill in the peach juices (trust me, you won't regret it). Brush with a bit of olive oil and sprinkle with salt.



This is such a delicious summer salad! It is fresh and salty and you'll want to make it again and again.


For the kids I served it deconstructed and they ended up putting the cheese and grilled peaches on the bread and making sandwiches. This one was a hit!
